When I thought of what to have for dinner and thought this up, I was anticipating something that looked... prettier. However ugly this looks, this dinner took me 10 mins to prep, cook, and clean up. It's also paleo, so therefore gluten and dairy free. Not to mention it packs a whopping 28 grams of lean protein. I believe this was a night where the dinner options at Watson's eatery were looking pretty dairy heavy. So, I brought down some tupperware and filled it with cauliflower, broccoli, olives, and tomato slices. In my mind I was thinking pesto cauliflower rice with tuna. This pesto was on sale at the grocery store so I thought I would give it a try and it's delicious.
The thing about this recipe is it's pretty flexible. I plan on subbing canned tuna for salmon next time, I was also considering eggs. I used line caught tuna from Trader Joe's. It costs a dollar something. The other things were from the salad bar and the pesto I had on hand! Super cheap, easy, healthy and quick din!

Cauliflower 1C
Broccoli .5C
Tomato .5
Olives .25 C
Pesto 1.5T
Canned Tuna 1
Coconut oil 1t
D I R E C T I O N S
-Heat pan on medium heat with the coconut oil
-Pulse the cauliflower in a food processor or blender until it's riced. Add to pan. Stir every so often so it doesn't burn
-Chop tomato, broccoli, and olives. Add to pan
-Add pesto and cook until broccoli becomes bright green
-Add the whole can of tuna to the pan, break apart and mix well
-Add it to a bowl and enjoy after a good workout!
