At any given time you could walk into my room and find a minimum of 10 bananas strewn across my room in random places to avoid having them ripen too fast. Alas, I can not eat 5 bananas a day to keep up with the rate that I hoard them at and slowly but surely, I start to get brown bananas all over my room. So every week I make my paleo banana protein loaf to have as an on the go snack, pre-workout snack, side to my breakfast, or dessert. Now I used to call this banana bread, but that was just confusing because this does not taste like, nor does it have the texture of regular banana bread. Which is really just banana cake anyways. This is a very dense and moist loaf. It's nutrient dense and packed with protein. You can add up to a tablespoon of honey to the recipe if you have a sweet tooth, but I prefer it this way. You could also add fruit such as berries or chopped apples and pears. Sometimes if I have too many berries in my fridge I'll add those.
Top with some natural sunflower seed butter or almond butter for some added protein and enjoy!

Bananas* 1C Mashed
Almond Flour .5C
Coconut Flour .5C
Eggs 4
Vanilla Extract 1T
Almond Extract 1T
Coconut Oil 2.5T
Ground Cinnamon 1T
Ground Turmeric 1T
Hemp Hearts 3T
Flaxseeds 1/8C
Sunflower Seeds 1/5C
*1 cup of mashed bananas tends to be 3-4 depending on the size, but it really doesn't matter if you're slightly above or below. The bananas do not all have to be brown if you want to minimize your blood sugar levels even more. Slightly spotted, yellow and even slightly green work, they just take more effort to mash.
D I R E C T I O N S
-Preheat oven to 350 Degrees
-Mix the mashed bananas, eggs, 2 tablespoons of melted coconut oil, vanilla and almond extract with a fork or whisk until well mixed.
-Add the almond and coconut flour. Mixing with a rubber spatula here works best.
-Add the cinnamon and turmeric and mix until well blended
-Add in the hemp hearts and seeds. Mix well
-Add any additional fruit or honey if desired
-Grease a loaf pan with remaining coconut oil and add the batter
-Bake in the oven for 45mins or until the top forms a golden brown crust.
