I HAVE AN OVEN AGAIN!
I didn’t even know what to make first. After letting Shanghai destroy my body for 4 months I’m excited to eat like a normal human again. Well, like normal Melissa again. That means well rounded, nutrient dense, delicious meals. I finally decided to make one of the staple dishes I ate a lot of last year when I lived in off-campus housing. My take on Paleomg’s Spaghetti Squash Pizza Casserole. Grain free, dairy free deliciousness that can last for up to a week(Which is why I made it so much during school term. A good, healthy, cheap, make-ahead dish that is my favourite comfort food.

Spaghetti Squash 1
Turkey Sausage 2
Garlic 2 cloves
Shallot 1
Tomatoes 3
Spinach 2 C
Fresh Basil .5 C
Rosemary 2 Sprigs
Oregano 1t
Chives 5 Blades
Tomato Paste .25 C
Tomato Puree 1.5 C
Bell Pepper .3 C (Or any other random vegetables you have laying around)
Olive Oil
Salt n Peppa

Pre heat the oven to 400. Take the spaghetti squash and slice in half lengthwise.
Place inside faced down on a lined baking tray and bake until you can easily pierce the top of the squash. (about 30 mins)

Pre heat the oven to 400. Take the spaghetti squash and slice in half lengthwise.
Place inside faced down on a lined baking tray and bake until you can easily pierce the top of the squash. (about 30 mins)
*While the squash is baking*
Mince the garlic and the shallot. In a medium saucepan add a good glug and swirl of olive oil. Enough to coat the pan.
Add the garlic and shallot, set to low heat and stir for 2 minutes or until garlic starts to become golden.
Turn off the heat and add the tomato paste.
Chop the pepper and add to the pot.
Turn the heat back to low.
Squeeze the sausage filling out of the casing and into the pot. Stir for 2 minutes. Then you get this beautiful looking mixture.

Once the squash is done, grab a spoon and scoop out the seeds. Then take a fork and pull out the flesh of the squash.
Add the squash to the sauce and combine.
Whisk 3 eggs in a bowl and add to the pot. Combine well.
Grease a baking dish with olive oil.
Add the squash and sauce mixture.
Then you'll have something that looks like this:

Place in the oven and bake for an hour or until a crust forms at the top.
