You know what's kinda hard? Being paleo in Shanghai. Well, I guess its not really THAT hard. But when your Western paleo diet consisted of the staple banana protein loaf for a quick snack, or sunflower seed butter on a spoon while Netflix binging, it gets hard. The real struggle is not having an oven. I was really craving a blueberry muffin, not a blueberry cupcake(which is basically what you get in bakeries) but since I couldn't bake one here, I decided pancakes was the next best thing. Next challenge: Blueberries are stupid expensive here. Solution: I had freeze dried strawberries and a coffee bean grinder, so in the strawberries went to make powder to add to my mix like I did with my Paleo Waffles in the past(Oh yea.. remember these bad boys instagram followers?). Throw in what I got, surround with some fruit, and top with some peanut butter and bam! PBJ paleo pancakes! So if you're ever in Asia and are craving some healthy pancakes, give these a try! Or just trust me and give them a try. ;)
*Also, they didn't come out pink, which was upsetting, but do look kinda burnt. I promise they weren't! The pumpkin seed butter I used is green, and that mixed with the strawberries gives a weird colour.

Banana .5
Eggs 2
Almond Milk(or other non dairy milk)2T
Amaretto(obs) 1T
Nut or Seed Butter(I used pumpkin & sunflower seed) 2T
Honey 1t
Coconut Flour .25C
Cinnamon .5T
Freeze-dried Strawberries A handful
Baking Powder .5t

Take your freeze-dried strawberries and grind them into a powder. Set aside. Get a medium sized bowl and mash your banana in it. Add eggs. (alternatively you can throw these in the blender for a smoother batter but its more to clean and doesn't make a huge difference) Mix well and then add the nut or seed butter, honey and Amaretto. Mix well. In a separate, smaller bowl, add your coconut flour, cinnamon, baking powder and strawberry powder. Mix. Slowly shake the dry ingredients into the wet ingredients while mixing. Mix until JUST combined. The trick to fluffy pancakes is to not over mix. Grease a pan with coconut oil and set to medium heat. Add four spoonfuls of batter at a time for each pancake until batter runs out. Spread slightly on the pan to even the pancake out. Once the edges are cooked, run the spatula under the pancake and make sure you can move it around so that it doesn't stick when you flip it. Flip it. Flip it good. Cook for about 20 seconds then flip again to check doneness. When your pancake is to your liking, plate it, eat, love it.
Top with bananas, jam, nut or seed butter, or just eat them plain!
